Eco-Vegan Gal reviews Livin’ Spoonful Coconut Curry Crackers

Last week while searching for Livin’ Spoonful’s site online, I ended up finding a great review about our Coconut Curry Crackers on Eco-Vegan Gal’s blog from January. The author, Whitney Lauritsen, said that she had been looking for satisfying healthy snacks (which she defined as being gluten, soy and dairy free, unprocessed, plant-based, organic and low or no salt, sugar or oil).

Raw Vegan Recipes

Choosing Raw consistently has gorgeous recipes with photographs that leave me drooling and heading immediately to the organic market for fresh produce to try one of their beautiful recipes. Earlier this month they shared a to die for grape avocado and baby kale salad with quinoa that literally had me salivating before I even finished reading the post.  This post began with the awareness that vegan, raw cooking can feel like a lonely place if the majority of your friends eat cooked meals, so finding community online and inviting your friends to try home cooked vegan meals can help entice people to share community over your gorgeous meals and fresh lifestyle.

Run for Your Life

I’ve been a runner my entire adult life; my whole life really. I remember winning the “marathon” as a 5th grader during a mini-Olympics event at the end of the year. There is something about running for me that lifts me up and settles me down at the same time.  I’m aware of my feet hitting the ground as I glide along, my breath deep in my chest and belly, my arms keeping rhythm with my legs, and the wind, rain, sun on my face and hair. Running is a time for self-reflection, for noticing the intricate complexity of nature, for appreciating beauty, for solitude or companionship. When I’m out on the road or trail, I feel whole, integrated – body, mind, and spirit.

Running is also a metaphor for life. Are you running toward something or running away?

Rich Transitions

Last month I wrote about meeting a new friend, and described the best I could, the spiritual dance that occurred before we actually said yes to the friendship. It was like the volume of her spirit was turned up and was speaking to me even before our first conversation. There were a few other encounters I remembered after writing the last post, which has made the whole experience even richer for me.

Recipe: Mediterranean Pizza

Mediterranean Pizza

3 spinach leaves, diced
2 kalamata olives, diced
1 tsp. feta cheese
1 sun-dried tomato, diced

1. Chop the olives, spinach, and feta and mix in a bowl
2. Spread onto a Livin’ Spoonful Pizza cracker
3. Enjoy a little Mediterranean treat!

Gluten Sensitivity

A post from earlier this year on Gluten Free Living’s blog talked about the differences between celiac and gluten sensitivity. According to this post, 15 international celiac experts in the BMC journal claimed that people can get sick from gluten without actually having celiac, and in a condition called gluten-sensitivity. In the past, gluten-sensitivity wasn’t considered a real condition, but more recently it is gaining recognition by the medical community, and more people are aware of of the impact of gluten on our bodies.

Hunger & A Recipe for Stuffed Bell Peppers

I’ve been thinking a lot about hunger lately, especially in the sense that it goes deeper than just a need for nutrition and food. Often if we really explore what it means to be hungry, or what we are truly hungry for, we discover the root of our hunger lies in a need for community, nurture and wholeness. I’m finding this to be true for myself as I recently transitioned from a job and lifestyle that was not holistically life-giving. I now have more time (and the desire) to invest in my life from a more holistic advantage which includes returning to my need for a gluten-free way of eating. The simple (and sometimes not so simple) act of eating, choosing what nutrients to put into my body affects many things other than just filling the temporary void of hunger pains throughout the day.

Recipe: Caprese Pizza

Caprese

1 Livin’ Spoonful Pizza cracker
1 slice of a tomato
1 slice mozzarella
2 fresh basil leaves
a touch of balsamic vinegar and olive oil (if desired)

1. Drizzle cracker with a bit of oil and vinegar
2. Layer tomato, basil and cheese on top for a tasty snack
