Recipe: Open-faced Reuben Sandwich

Vegan Reuben Sandwich

2 LS Caraway Crackers
Tempeh (I used Marinated Smoky Maple Bacon)
1 slice of Muenster Cheese by Red Apple Cheese (all natural, vegetarian, gluten-free)
1/4 c. organic sauerkraut (mix with 1 tsp. apple cider vinegar, 1 clove of garlic minced, pepper to taste, 5 capers- let sit in the refrideragtor for 1 hour)
1/4 c. Veganese + 1 tsp. organic tomato paste, 1 tsp apple cider vinegar, 10 capers- let sit in the fridge for 1 hour)

Broccoli Roasted With Garlic

This broccoli recipe is by far the most delicious thing I have stumbled across in a long time! It works great as a dinner side dish, or make a big batch of it and keep it in your fridge for an easy, healthy snack or working lunch.

This is easily modifiable based on how spicy you like your food – please keep in mind that the proportions I used are for someone who really loves garlic and doesn’t mind a bit of kick!

Recipe: Mediterranean Pizza

Mediterranean Pizza

3 spinach leaves, diced
2 kalamata olives, diced
1 tsp. feta cheese
1 sun-dried tomato, diced

1. Chop the olives, spinach, and feta and mix in a bowl
2. Spread onto a Livin’ Spoonful Pizza cracker
3. Enjoy a little Mediterranean treat!

Hunger & A Recipe for Stuffed Bell Peppers

I’ve been thinking a lot about hunger lately, especially in the sense that it goes deeper than just a need for nutrition and food. Often if we really explore what it means to be hungry, or what we are truly hungry for, we discover the root of our hunger lies in a need for community, nurture and wholeness. I’m finding this to be true for myself as I recently transitioned from a job and lifestyle that was not holistically life-giving. I now have more time (and the desire) to invest in my life from a more holistic advantage which includes returning to my need for a gluten-free way of eating. The simple (and sometimes not so simple) act of eating, choosing what nutrients to put into my body affects many things other than just filling the temporary void of hunger pains throughout the day.

Recipe: Caprese Pizza

Caprese

1 Livin’ Spoonful Pizza cracker
1 slice of a tomato
1 slice mozzarella
2 fresh basil leaves
a touch of balsamic vinegar and olive oil (if desired)

1. Drizzle cracker with a bit of oil and vinegar
2. Layer tomato, basil and cheese on top for a tasty snack
